Apple-nut coffee cake
½ c. shortening
1 c. sugar
2 eggs
1 tsp. vanilla
2 c. flour
1 tsp. baking powder
1 tsp. baking soda
¼ tsp. salt
1 c. sour cream
2 c. finely chopped apples

Topping:
½ c. chopped nuts
1 tsp. cinnamon
2 T. butter, melted
Cream shortening and sugar. Add eggs and vanilla; beat well. Sift together flour, baking powder, baking soda and salt. Add to creamed mixture, alternating with sour cream. Fold in apples. Spread batter in 9 x 13-inch greased pan. Mix topping ingredients, then sprinkle it over the batter.
Bake at 350 F for 35 to 40 minutes.
