Pumpkin oatmeal chocolate chip cookies
4 c. flour
2 c. quick oats
2 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon
1½ c. butter
2 c. brown sugar
1 c. sugar
1 egg
1 tsp. vanilla
1½ c. roasted or boiled
pumpkin, or 
1 can pumpkin
1½ c. semi-sweet chocolate chips
Preheat oven to 350 F. Combine flour, oats, baking soda, salt and
cinnamon; set aside.
Cream butter, gradually adding sugars, and beat until light. Add egg and vanilla. Alternate pumpkin and dry ingredients, mixing well. Stir in chocolate chips. Bake about 10 minutes. Makes 8 dozen. (They freeze well.)
