Summer salad dinner
3 c. fresh lettuce
1 large tomato
½ cucumber
½ c. peppers, any color
½ c. broccoli
½ c. cauliflower
¼ c. sliced summer squash
2 hard-boiled eggs
1 c. apples, your favorite variety
½ c. diced colby or Monterey jack cheese
Toss and serve with Roasted Garlic Bread or French Bread. We like to top it with Tomato Vidalia Onion Salad Dressing. You could also add grilled chicken. Should serve 4.
